Mine is Luke vs Vader from RotJ and Anakin vs Dooku from the RotS novelization.

Luke vs Vader from RotJ

Cilghal vs Saar from FOTJ Backlash (I love the way the book describes the duel, it feels so real), Sidious vs Maul and Savage, Luke vs Vader in ESB but my absolute favorite has to be Maul Vs Qui Gon and Obi wan from TPM.

Jaina V Jacen in Invincible (Second Fight).

Luke vs. Vader from RotJ, Luke & Krayt vs. Abeloth from FotJ, Revan vs. Vitiate in the Revan novel, Krayt vs. Wyyrlok in Legacy, the Battle of Geonosis from AotC, the Second Battle of Geonosis from TCW, Maul vs. Sidious in TCW, Vizsla vs. Maul from TCW, Fett vs. Vader from that one comic.

Anakin vs Ventress - OCW

My favorite sw fight is Anakin vs Obi Wan. Second place probably goes to Yoda vs Sidious.

Anakin vs Obi-Wan and Luke vs Vader (ROTJ). Other than that, Dooku vs Ventress vs Savage.

The ROTJ duel was a disappointment tbh. Vader and Luke were too evenly matched for it to be really suspenseful; hell Luke even seemed the slight superior at the start. ESB was a much better duel in terms of suspense. 

Vader throughout ROTJ just doesn't have the same appeal as he did in ESB. In the latter, he was ambitious, in charge, and driven, in ROTJ he's been emasculated and resigned to serve.
