Inclined to say Mace wins, but it’s a very good fight nonetheless. He’s repeatedly been stated to be a near-Yoda level combatant.

Assuming Mace doesn't "cut loose" it could go either way. Statements aside they have similar showings against the same opponents. Dooku stomped an untrained Ventress, Mace all but did the same to 3 ABG Ventress while trying to capture her alive, and Dooku beat prime Ventress with only minor difficulty. Dooku humbled Grievous in their training sessions with minor difficulty though with the advantage of knowing his style and his weaknesses. Mace beat a partially hindered Grievous with moderate difficulty, given that he doesn't possess the same advantages Dooku had I'd say it levels out.
I'm not really in the camp that thinks Mace was "amped". It's just that he was always holding back until his duel with Sidious, hence him "cutting loose". That said it's debatable it wouldn't apply to Beginning-of-RotS Mace.

@meatpants @Arkhamasylum3 Reasons for Dooku winning?
Mace could legit contend with Sidious even without the vapaad amp, while Dooku is implied by Lucas to be far below Sidious.
I don't think Dooku has much of a chance here.

Mace, but Dooku makes him work for it. He's considerably superior in both power and skill, but a character who gave Yoda a good fight isn't just going to be swept aside effortlessly.

Well he was holding his own before he was fully immersed into Vaapad, but I don't see that as beyond what Dooku accomplished when Yoda went on the offensive in AotC. Before cutting loose he and Fisto were on the loosing end and he was described as "fighting for his life" . Pretty much both Dooku and Mace fought losing battles against Yoda and Sidious and held their own while being hopelessly overmatched.
Now of course if Mace "cuts loose" and fights "without Jedi restraint" at any point yeah Dooku doesn't stand a chance, but if not I can see either taking it. Their respective performances against Ventress, Grievous, and Sora Bulq are similar enough. Not to mention all the quotes pegging them as peers.

I'd be reluctant to compare Dooku and Mace's feats against Yoda and Sidious respectively. There's a good chance that Yoda was emotionally hindered and thus holding back in his fight with Dooku, whereas Mace was initially overwhelmed due to being caught off-guard by Sidious' speed and skill but quickly compensated and ultimately gained the upper hand.
I think that a holding back Mace is only a bit above Dooku in power and skill, but yes an all-out Mace would defeat Dooku pretty quickly.

Yes because Yoda is such a cold hearted arsehole that he'd disregard the face that he's fighting the guy he thought of like a kid instantly, right? He totally wasn't still trying to turn Dooku back to the light as late as Dark Rendezvous, was he?
