As for Kit Fisto, he did take all of Sidious' power head on and held it off for a short time. Despite being blindsided by Sheev's speed and ferocity, he still was able to combat him for a few seconds, blocking several hits from him. Compare that to Maul, who with Savage was being toyed with until at the very end where Sheev was getting tired and fed up of the game and immediately disarmed Maul. 

Also consider that Maul had the benefit of some knowledge of Sheev's fighting technique, his power and his physicals, whereas Kit went into that duel completely unprepared.

No, this is still wrong. 

1. Fisto blocked two hits from Sidious with Windu and then got cut down. Simple as that. Gillard, who choreographed the fight doesn’t believe Fisto’s performance against Sidious is good enough to rival Jinn’s fights against Maul. 

2. Sidious wasn’t toying. Provide the evidence? 

3. It doesn’t matter much that Maul was taught by Sidious, because Sidious’ whole style is based on deception and making you think you know what he’s doing. Also, Sidious is so much faster than Fisto that it wouldn’t matter if Fisto knew his style.

Two notes: First, Fisto was blindsided by Sheev's speed and ferocity. Two, of course he didn't believe it was the same thing. Sidious is operating on an entirely other level than Jinn or Maul. Remember that only MFV, Mace and Yoda could have contended with and potentially beaten Sidious. My point is that even blocking these hits is insanely impressive.

Read the previous quote. Sidious eventually gets bored and just ragdolls Maul, indicating that he was taking a sick pleasure in tormenting and toying with the two brothers. The only evidence that he wasn't toying with them was Maul and his saber lock, which if you look closely Sheev purposely attacks from a low point then immediately gains the advantage as soon as he augments his strength further. 

3. It doesn’t matter much that Maul was taught by Sidious, because Sidious’ whole style is based on deception and making you think you know what he’s doing. Also, Sidious is so much faster than Fisto that it wouldn’t matter if Fisto knew his style.

I'm not saying it would, lol. I'm saying that Maul would enter into that fight thinking "I can't be sure of anything he does so I have to fight to my absolute best." Kit was shocked by Sidious' abilities and immediately forced on the defensive, being cut down before he could bring himself to do anything more than desperately fend off a guy who just blitzed his two friends after getting them to lower their guards. Kit obviously can't contend with Sheev for than 5-10 seconds, but it's important to acknowledge the circumstances around his and Sheev's "fight".

Sidious was toying the whole time. In both the episode and the novel, he ramps up his output to quickly dispatch an ultra rage amped Maul with clearly more dominance that he displayed against the brothers earlier. He could have ended the fight whenever he chose.

He was blindsided by Sidious' speed because Sidious is exponentially faster than Kit Fisto... Fisto is canonically a tier 7 duelist, Sidious a 9. We know that the gaps between 7-8 and 8-9 are the largest in the tiers. Even if you don't subscribe to how Lucas' vision of how the fights should go according to the skills of the duelists, it's quite clear that Fisto is nowhere near Sidious. We got Fisto getting completely dominated by Ventress, then Yoda effortlessly ragdolling that Ventress in S1 if my timeline is in order. So like yeah... Fisto is gonna get blitzed whether he's expecting the attack or not.

I don't think you're quite getting what Gillard said. He literally says that Fisto didn't show anything on screen that justifies him being above Qui-Gon - and he says this with the personal belief that Fisto would have been better than Qui-Gon.

Remember that only MFV, Mace and Yoda could have contended with and potentially beaten Sidious. My point is that even blocking these hits is insanely impressive.

There's no evidence Mace could beat Sidious, only contend. I like the sneaky Mace wank, but it's wrong.

Moving onto the meat, Gillard doesn't agree with you that Fisto holding his saber up to block one hit, then making contact with Sidious' saber another time in conjunction with Mace justifies him being better than Qui-Gon. From a wider lore perspective, it also doesn't justify it. A duelist CAN go well above their normal performance level, but it burns them out so fast that it's almost never worth it.
