I can see a good argument for either. Canon Anakin has far, far more high-end feats, but Mace has a more legitimate standing against Sheev in canon than he did in Legends. Considering Sidious should be well above canon Anakin, I'm inclined to lean toward Mace.

Windu solidly. His fight with Sheev puts him above Anakin.
