The gauntlet order is chronological, it isn't about stops at which stage.

1. Maul passes. 

It's probably not too different from the battle Maul had with an enraged Kenobi. On Ilum Anakin had fought an illusion of Maul. He'd probably use his rage similar to how he fought Dooku on Geonosis. Problem is Anakin's rage at this stage is unfocused in contrast to Maul who finds focus and clarity through rage he should have the edge in that kind of battle as he did against enraged Kenobi, he'd probably give Maul some initial difficulty as Kenobi did but Maul should be able to work himself back into the fight and maybe even use his rage as a conduit as he did against Kenobi. The double-bladed lightsaber would give Anakin some problems. We know from the TCW JN he's not accustomed to its unfamiliarity:

2. Maul passes

Maul should have an even easier time here. Anakin's transitioned into a more collected and measured tactical fighter but at the expense of his aggression. He doesn't use his rage nearly as much either.

Same as 2.

4. Maul passes

Maul's martial skill probably gives him the decisive edge here. He's at least as good as Ventress in that area who is always finding openings to kick Anakin at this stage.

5. Maul passes

A competitive fight but Maul still edges out. The pattern I'm seeing is that while Anakin has better natural talent Maul's superior skills and training coupled with his not inconsiderable talent is the edge at this stage in Anakin's career. 

6. Maul passes

Same as 5

7. Stops here

Maul would have the edge in the initial stage but after a few minutes, Anakin will get more and more fired up and should be able to overpower him in a head-to-head exchange.
