This post aims to cover a variety of Jedi which have a small number of sources but seem to very strong or i just find them interesting.

BIEL DUCTAVIS

Biel Helped rebuild the Republic and Jedi after the end of the Pius Dea crusades (11k BBY) by being simultaneously the Supreme Chancellor and the Jedi GM.

Meanwhile, the Jedi did as they had promised, rebuilding the Senate and the Republic under the leadership of Biel Ductavis, who served simultaneously as the Supreme Chancellor and the Jedi Grand Master.

Biel Ductavis created a holocron which was kept in a special vault on Ossus, the information was lost during the destruction of ossus. If this holocron was retrieved it could rewrite galactic history

LACUNAS SUBARTUK

Lacunas Subartuk is noted as one of the most vigilant Jedi of the order. Plo Koon and other Jedi knights also base there lightsaber off of him

Using historical tests found within the Jedi archives, Plo Koon, along with several fellow Jedi Knights, designed this hilt to resemble the lightsaber carried by Lacunas Subartuk, one of the most vigilant Jedi of the ancient Order. In future generations, this design would inspire the more modern "Sentinel" lightsaber hilt in the Jedi Order founded by Luke Skywalker

This rugged lightsaber design is noted for the radiator casing segment, which forms the tapered, or conical, shape at the base of the hilt.

Luminara uses Subartuk's design aswell, Subartuk is also noted as one of the greatest Jedi warriors.

A serious-minded Jedi Master, Luminara studied many Jedi traditions and fond inspiration in molding her lightsaber after that of one the greatest Jedi warriors.

Like that of Plo Koon's lightsaber, this hilt features a conical radiator casing segment at the base.

CHU-GON DAR

Chu-Gon Dar's power in the physical force is unmatched

Ithes Olok: Chu-Gon Dar was a Jedi Master that lived thousands of years ago during the era of the Old Republic. He resided at the Jedi Temple here on Mustafar and his knowledge and understanding of the Physical Force was unmatched by any other.

Chu-Gon Dar used his power in the physical force to create cubes which can transmogrify matter on molecular level and are strong in the physical force

Ithes Olok: Well, you see, the legend goes on to say that using his vast understanding, he created a device. A device designed to channel and manipulate the Physical Force.
PC: What does the device do?
Ithes Olok: The details are a little fuzzy there, but from what I can tell, it was meant to alter the physical properties of the items that were placed inside of it. Apparently, this sometimes produced interesting results.
PC: Interesting results?
Ithes Olok: The device is said to have worked off the principle that the Force flows through all things, both animate and inanimate. If the proper items are placed in the device, and the Physical Force altered in a certain way, it is theoretically possible to merge those items into something entirely new!
PC: What does any of this have to do with your research?
Ithes Olok: Ah yes, the exciting part. After the fall of the Old Republic, the Jedi Temple was abandoned. Eventually, it collapsed due to the violent nature of this planet, and the device and its secrets were lost.
PC: Yes, and?
Ithes Olok: And...a recent excavation of the Jedi Temple ruins revealed a hidden underground storage chamber. It was filled with hundreds of these small cubes you see here. I believe that these cubes are duplicates of the device that Chu-Gon Dar created so many years ago.
PC: Really? Do they work?
Ithes Olok: To be honest, I don't know. These cubes do radiate strongly with the power of the Physical Force, and they do seem hollow inside. I just can't seem to get any of them open. However...

Ithes Olok: I've initialized the cube so that it can be opened. Just open it like you might any other container and place the items that I gave you inside.
PC: I see. Then what?
Ithes Olok: Once the items are inside, close the cube and then activate it using the radial interface there on the cube.
PC: OK, then what?
Ithes Olok: Then you should have a brand-new item inside! Significantly different from the original items that you put in there. Isn't that marvelous!
PC: Is there anything else I should know?
Ithes Olok: Just remember that you must combine exactly three items in the cube. It won't work with only one or two. And you will not be able to combine every single item. Only certain items that have an appropriate Force alignment will work in the cube. Does that make sense?

The surface of the Chu-Gon Dar Cube shimmers with the power of the Force.

By meditating and channeling the Force through the cube, it is possible to manipulate the inanimate objects inside,  merging them to create something entirely new.

Master Chu-Gon Dar served as one of the academies luminaries and his mastery of the force ran so deep he could alter the molecular structure of matter

The padawan's eyes widened with amazement! Her master had put a few odd pieces of junk into a glowing blue cube and meditated. A short while later he pulled out a hat. "There you go!" he said, smiling as he handed her the small fuzzy hat.

Cube of Chu-Gon Dar (p. 10), a mysterious but distinctly useful artifact

The Cube of Chu-Gon Dar is an unusual artifact available to adventurers who visit Mustafar.

Chu-Gon Dar was an ancient Jedi mystic who created a number of these powerful Force devices long ago on Mustafar. Today, the secret of the cubes’ design has been completely lost. They are durable things, however, and a researcher named Dr. Ithes Olok has recovered several cubes still in good working order. He’s willing to share some of his spares with those who don’t mind performing a small service for him.

What the cubes do, basically, is turn several things into a single, more powerful thing. Various objects found around Mustafar can be transformed with a cube. Of course, objects obtained from more dangerous threats tend to create the most powerful combinations. Usually it requires three objects for the cube to create one new item. (See p. 95 for recipes.)

He is a great Jedi

Spinning madly in an erratic orbit around Jestefad , the lava world of Mustafar is no longer the verdant home to light Jedi temples and rolling green landscapes. Long forgotten are the memories of the great Jedi Masters Chu-Gon Dar, Erg Krow and the guardians of peace. No one remembers their struggles against the Sith armies except the planet of Mustafar itself and this angry little world is tired of keeping it's secrets…

Alongside Erg Krow was involved in a final battle with the sith

"Yeah. With all the recent activity on the planet, we've discovered some old legend about a Jedi Master. Two actually: Chu-Gon Dar and Erg Krow. Their names were discovered on a tablet that depicted the history of the Sith Wars. It took some time to decipher the old language, but the Jedi I mentioned were involved in a final attack against the Sith."

THE FOUR MASTERS

The Four Masters are the 4 statues of Jedi out the front of the temple that we see in ROTS, these 4 Jedi founded the temple and are made up of 2 warriors and 2 sages
